This was one of the most beautiful farmers market salads with hickory smoked cashew cheese dressing I’ve ever created.
It had so much flavor and so many wonderful textures. Not to mention a ton of nutrients!
Romaine lettuce, kale, tomato, cucumber, sugar snap peas, carrot, garbanzo, asparagus, avocado, fresh dill, lemon and Fat Uncle Farms sprouted lemon pepper almonds.
For the dressing, I combined hickory smoked Nairy Dairy and a little bit of almond milk. The dressing added the smokey, creamy element I needed to finish off the dish!
Now that Nary Dairy is no longer available, you can combine any of your favorite cashew cheeses with a little almond milk to make a creamy, quick dressing.
